Chia, Hemp and Almond Butter Pudding

Chia pudding is an excellent breakfast or snack option.

This recipe is extracted with the author’s permission from ‘Everyday Nourishment’ by Madeleine Trueman.


ingredients:

750ml coconut milk (e.g/ coco quench)

1 - 2 tbsp maple syrup

1 1/2 tsp vanilla bean powder or paste

1/2 cup chia seeds

1/4 cup hulled hemp seeds

3 tbsp almond butter

2 figs, quartered

method:

1. Add coconut milk, maple syrup and vanilla bean powder or paste to a large glass jar. Add lid and shake until well combined.

2. Add chia seeds and hemp seeds, stir to combine. Leave for one minute then stir or shake again. Repeat once more then refrigerate for a minimum of 3 hours.

3. To serve, scoop chia pudding in to a small bowl or jar. Top with a dollop of almond butter and sliced figs. Enjoy!

notes:

Chia pudding will last up to 5 days in an airtight jar in the fridge.
